TASTING NOTES Colour: Deep, velvet, rich and ruby. Nose: An intense and luscious melange of, ripe blackcurrant, cedar, mint, walnut and floral aromas tantalize the senses. Palate: Deep, rich and elegant with an abundance of mouth filling ripe blackberry, cassis and nut flavours. Good integration of wood and fruit with smooth but firm tannins, well balanced and complex with a long, full finish. Overall: A serious full-bodied fruit driven red wine, expressing good maturation potential. Food suggestions: Beef fillet, roast of lamb and rich red meat casseroles.
IN THE VINEYARD The grapes are of specific clones (46 and 205) from selected vineyards, bearing low yields, predominantly from the Stellenbosch area. Canopy management allows fro slow ripening and the optimum development of varietal flavours.
THE HARVEST Harvesting commences at phenolic ripeness.
IN THE CELLAR The grapes from each vineyard and the different clones are vinified separately. Fermentation on the skins is completed after six days at 30ºC, wood maturation for twelve months in 50% new and 50% second fill barrels allows for well integrated fruit and wood flavours. The wine from the different barrels and clones are then blended together for the specific style.
