TASTING NOTES Colour: Light green with hints of gold. Bouquet: Citrus and apricot aromas with vanilla in the background. Palate: A fruity and fresh wine, with subtle citrus and apricot notes, combines with delicate barrel fermented flavours. IN THE VINEYARD The fruit of this wine, ranging in age from 9 - 13 years, were sourced from vineyards in the Stellenbosch and Paarl areas, situated on mostly south to south-westerly facing slopes. THE HARVEST The grapes were harvested by hand at 23° and 24° Balling during February and March. IN THE CELLAR Following settling, the clean juice was racked to fermentation and inoculated, and the Chardonnay was fermented with oak staves.
