Harvest at 13 % alcohol – best for flavour and colour extraction. Skin contact in open fermenters for 3-3.5 days at 28-30 ºC. We still punch cap by hand. After primary fermentation malolactic fermentation into oak for 14-16 months – 225 lit. French Nevers barrels (50 % new oak). |
| Product Description |
Kanonkop Pinotage is made of 48 year old bush vines. This vineyard was one of the first commercial plantings in South Africa. The age of the vines definitely shows in the 1992 deep red colour, concentration of fruit and soft tannin structure. The nose shows typical black current fruity flavours, combined with oak. On taste the fruit, oak, tannin and acid are well balanced, with a long fruit aftertaste. A wine that will age well in the bottle for at least a further 5-8 years. |
