Haut Espoir Sauvignon Blanc 2004

This fine unwooded wine has a pale green colour with hints of yellow. The flavours and aromas are of upfront passionfruit with citrus and lime. The palate is crisp and dry accentuating the tropical fruit layers. The finish is long and elegant with crisp acidity.

It is released ready to drink and will continue to develop in the bottle.

SOURCE:
This 2004 Sauvignon Blanc was produced from fully ripe grapes sourced from a nearby farm in the Franschhoek valley.

WEATHER:
The summer was dry and hot with two particularly hot periods in January and February. The hot conditions developed good fruit flavours and aromas.

HARVESTING:
The grapes were hand harvested in the coolness of early morning on 17 th February.

VINIFICATION:
The selected bunches were gently handled to release a crisp, clear juice and this left to settle for two days in cold tanks. The juice was racked to fermentation tanks and fermented to dryness over 15 days at cold temperatures to retain freshness and the fruit characters. The new wine was left on the lees for four months before being cold stabilized. . The wine was filtered before bottling.

FOOD ACCOMPANIMENT:
Sauvignon Blanc is best enjoyed chilled as an aperitif, or as an accompaniment to fish and seafood dishes, fresh garden salads, asparagus and spiced Asian dishes.
It is released ready to drink and will continue to develop in the bottle.
