SOURCE: This 2004 Semillon was produced from single vineyard 15 year old vines sourced from a farm in the Franschhoek valley.
WEATHER: The summer was dry with a small amount of rain. The conditions were ideal for developing good fruit flavours and aromas.
HARVESTING: The grapes were hand harvested in the coolness of early morning on 22nd and 23rd February.
VINIFICATION: The bunches were gently pressed to release a crisp, clear juice and this cold settled for two days. The juice was racked to fermentation tanks and fermented to dryness over 12 days. Approximately 5% of the wine was aged in French oak barrels. The wine was racked off the lees and a small percentage of Sauvignon Blanc blended with it before being cold stabilised, filtered then bottled.
